Sybil Summers' Stuffed Peppers
INGREDIENTS
-4 Bell Peppers
-1 Lb. of Extra Lean Ground Turkey
-4 Tomatoes
-Pam or any fat-free cooking spray
-Fresh Garlic or garlic powder
-Fresh onion or onion powder
-Salt-free seasoning
-Black pepper
-Crushed red pepper (if you like it hot)
-Any other sodium-free seasonings (parsley, oregano, basil, etc.)
-Fat-free cheese slices (if desired)
INSTRUCTIONS
Preheat oven to 350. Boil peppers for 5 min. Brown turkey meat with salt-free seasoning and onions. Dice tomatoes and spray saucepan with Pam. Add tomatoes, spices, and garlic and bring to a boil. Simmer for 30 minutes. Mix meat with sauce and spoon into peppers. Bake in ungreased 8" dish, tightly covered in foil, for 45 min. Remove foil and bake uncovered for another 11-15 min. (If you like fat-free cheese, you can melt it on top for the last 15 minutes.)
Tuna Salad Wraps
Ingredients:
One 6oz can tuna in water (drained)
1 tblsp non fat mayonnaise
1 tblsp chopped onion
1 clove garlic minced
1 tblsp celery chopped
1 tblsp red bell pepper chopped
Salt sub and pepper to taste
2 whole iceburg lettuce leaves to wrap
Mix all ingredients, wrap in lettuce and enjoy!
Chicken Parmesan
1 lb chicken breast
Salt sub and pepper to taste
4 tblsp Walden Farms Bruchetta Sauce
4 oz fat free mozzarella or parmesan
Preheat skillet to medium high heat. Spray skillet with non stick cooking spray. Season chicken with salt sub and pepper. Place chicken in preheated skillet and cook until no longer pink in the middle only turning once. This will create a nice crust on the chicken breast. Top 5 oz chicken breast with 1 tblsp Bruchetta sauce and 1 oz of mozzarella (or parmesan.) Serve with a salad or spaghetti squash.
Makes 4 servings.
Cucumber and Tomato Salad
Ingredients:
1 ½ cups cucumber, diced
1 cup tomato, diced
¼ cup onion, diced
Balsamic dressing of your choice
Combine all ingredients in large bowl. Drizzle with Balsamic dressing and season with salt sub and pepper to taste. Toss and serve cold.
